Grammy: I liked the hardcover book so I purchased the kindle thinking it would be the same. For those of us who are usually rushed for time and like the convenience of a well designed index-beware-there is NONE. You have to read every entry in the table of Contents to remember what the recipe was called, instead of looking up by main ingredients in the index. It eats up your time, and I usually reach for something else which is well indexed. Publishers please don’t take shortcuts like this. I wouldn’t have bought it if I had known, even though I like the recipes and the author, I also want an index! The hardcover would be a 4, but I am giving the kindle a 3.

A. Argersinger: You can absolutely put your pie making future into Cathy Barrow's capable hands. Hubby immediately requested the brown sugar cinnamon hand pies which came out amazing and nostalgic - we ate two and I froze the rest and have been popping them in the toaster as needed (yes - NEEDED!). Next I made the Philly Cheese Steak Galette which blew our socks off - the balance of flavors in a mind-blowing caramelized onion and cheese crust is truly perfect. I have so many "to try" tags in the book I may as well just start at the beginning and bake my way through it. In fact, I think I will.

Becky at the beach: I love pie squared. It's beautiful to look at and wonderful to cook from. So I really wanted When pies fly. But I was worried, would it live up to Pie squared? Would there be new ideas? I can happily say it's fantastic too.
The recipes are fun, innovative, and thanks to clear well written instructions, achievable. Once again the pictures of the finished results pop and are totally drool worthy, but what matters is my result, and I'm happy to say my results are also drool worthy.
The recipes are black ink on white paper. The ingredients are listed, then the directions. Scattered throughout are also tips and step step by step pictures of various techniques, like blind baking
I grew up in the Midwest, with delicious pot pies, dessert pies. then we moved around and found pies in other parts of the country, from empanadas in el paso to crawfish pies here in New Orleans. All sorts of things can be put between crusts.
The table of contents is arranged by chapter, each chapter concentrating on a certain type of pie:
Galettes (rustic pies)
Hand pies and more (single serving pies)
Pie Poppers (snacking pies)
Framed tarts (decorated pies)

Rikki: "When Pies Fly" is another exciting addition to my Cathy Barrow cookbook collection. So many great recipes in this book, it has a huge variety, ten chapters of different types of pies. Plenty of traditional recipes and then delightful variations. I want to bake everything in this book. I made the antipasto stromboli for dinner tonight, and it was delicious. Her recipes are always reliable, and you can taste all the thought and care she puts into them. This cookbook is great for anyone who enjoys baking, beginners will enjoy the clear instructions, and more advanced bakers will enjoy the variety.

Holly Wade: Another purchase from Amazon suggestions and another delightful find! I am not a pie person but have a deep appreciation of knishes and finding cookbooks with great recipes for this comfort food is difficult. Not only are the knish variations absolutely delicious, but recipes for savory pie and tarts are abundant. From cheeseburger hand pies, crab Rangoon pie poppers and Philly cheese steak galette to a strawberry jam tart and brandied peach pie poppers, every recipe is well planned and concisely presented, and from my experience, delicious. A world of culinary delights not to be overlooked.
