Precise Disarray: Many products are sold based on weight, not volume. This contains 4 lbs of dehydrated potatoes. It will not be filled to the brim. It doesnt need to. It just needs to weigh 4 lbs, which is what you are paying for. In emergency food, the containers are typically chosen based on quantity and in keeping with uniformity. So with Augason Farms, you will find #10 (that reads, "number 10") sized cans for some weights and volume, and the buckets for larger quantities. Potato slices will initially take up some volume then settle. It is perfectly reasonable to have lots of space left over in a bucket. Why down rate for space left in the storage container when it is the weight of food you are buying? This product is fine. All is good. Go for it.
These potatoes are fine, and cook up well. I buy Augason products when they are on sale. Been doing this on and off for a few years now. Always been a bit of a "prepper", since I was a toddler it seems, haha (In my 40s now). It has served me well through power outages, sicknesses, unemployment, and even bigger stuff like the pandemic, and now... *vaguely gestures around* everything else that is going on. Jenny Everywhere: I have been trying to get some variety into our meals lately. What with restaurants closing or changing dramatically because of the lockdowns and restrictions, we're making more of our meals at home -- we tend to get focused on our online work at home, and will frequently order delivery or takeout because it's easier -- so I've been experimenting with different recipes of late. One thing we haven't been having much of is potatoes. Not because we don't like them, but because they're a very labor-intensive food unless you're making something simple like mashed potatoes from a box. I don't keep fresh potatoes in the pantry because the last time I did, the ones on the bottom had gone purple and greenish and started to sprout before I got down that far in the bag. (They're unsafe to eat when they reach that stage. Remember that they ARE a member of the nightshade family. In certain cases and conditions, they can be toxic.)
I tried a couple of the Au Gratin potato products on the market because they had dehydrated, sliced potatoes in them, but I didn't like the sauce packets they came with. For a while, I was buying the products, throwing out the seasonings, and just using the...

DazzlingDeeDazzlingDee: These taste excellent and they would definitely be great for emergencies, but they're extremely expensive for only 12 lbs rehydrated. I could dehydrate 40 lbs for the same cost in my dehydrator.
I would buy again but only on an as needed basis for pending disasters.
