Veronica P.: I've been processing for over 20 years on the farm. This book is the book I recommend to people wanting to learn to processing. It's extremely detailed and has photos, which for most people is essential. I have the entire collection and I recommend anyone who I raising animals to have these books. You never know when you'll need to process an animal and these book can help wall you through it.

Mahriah Grosh: I like this book because it goes into details on humane ways of dispatching animals and why some versions of dispatching animals that are common amongst people can be inhumane and there are better ways to and the animals life in a peaceful way and still respecting the animal.

I bought this book to teach me better ways on dispatching sheep, rabbits, and chickens without them hurting/ suffering.

I appreciate the animals providing substance for my family and friends and want them to have great lives with treats, friends, and playtime. They only have one "bad day" but my goal is for it to happen so quick they don't know.

Sheldon Nicholson: This book has gotten a lot of use. If you are like me and don't butcher full-time, its perfect for refreshing your memory on the exact steps. Use it as a reference while you're doing a batch of broilers, and its great for when you have inexperienced people helping you to get them up to speed.

Bu8ddy: This was a gift for a friend who has a multitude of butchering books but when she opened this one up and flipped through it looking at the incredibly well detailed illustrations she literally said "well I think I can probably throw out all my other butchering books now." This is an individual who collects and saves variations on ways of doing things, so speaks volumes of just how outstanding this book really is, plus for the price point....Wow you can't go wrong it's a heavy, well built/ put together book and arrived much faster than the expected arrival date. 5 out of 5 stars ++

Brent R Nassichuk: This book is the most thorough I've seen on the subject. Each chapter is well laid out and goes into detail on the specifics of dispatching and buthering each animal. There is considerable detail on humanely handing the animals and considers proper treatment throughout the process. I highly recommend this book. The details and photos make this a must have for anyone wanting to buthering their own meat.

XMS: This book describes the setup, tools, steps and details of on-farm processing of livestock animals, and the subsequent butchering, packaging and storage of the same.

If you are looking at your own on-farm slaughter, then this book walks you through everything you need to know: tools, location, setup, killing, bleeding, evisceration, skinning (or scalding hogs/plucking poultry), cooling, cutting into primals, breaking down sub-primals, cutting individual portions, and finally packaging and storage. If you are looking to process an already-slaughtered animal (from a processor), then the handling of the carcass is also handled exceptionally well.

The book covers a lot of territory. The slaughter operations is detailed, and the photos are clear and descriptive. For those who might be looking for a "coffee table book", please skip this one. The pictures are quite detailed and many are not the least bit appropriate for the squeamish.

Slaughter is covered for pig, goat, lamb, chicken, duck, goose and some more I probably forgot. You learn those and you can tackle most anything (note that there are no "game" processing in here - it does not cover deer processing...
