Roo: Excellent; tasty, Not good for you because coconut is saturated fat but who cares. Good to add to yogurt. Best combined with dried fruit like figs, prunes, etc to keep at work or bring in backpack on hikes to complement the dried fruit sweet with richness. Which also keeps hunger pangs away for longer.
I don't eat lunch weekdays; I just eat a few ounces of this fruit coconut combo to keep hunger pains away until dinner.
You can toast your own coconut but it won't be as easy to eat with your hands.
