Happyflowerlady: We all know that coconut meat is healthy and has even more nutrition than coconut oil has, but it is so difficult and time consuming to get a fresh coconut at the store, get it opened up, and then scoop all of that wonderful coconut meat out of the coconut.
Most of the shredded coconut at the grocery store is loaded with sugar, so not healthy either. This product is like fine slivers of coconut, not powder, but not large shredded chunks, either, just the right size for most uses.
I add it into cereals, cake mixes, and make a keto “overnight oatmeal “ from this, with chia seeds, almond meal, flax meal, a few blueberries and some fresh kefir. Leave it sit for a few hours , or overnight, and it thickens into a delicious (almost like pudding) mix that fills me up and adds lots of healthy fiber to my diet.
