These are great for making your own frangipane and end up being less expensive than using almond paste. Here's my recipe that makes enough for 40 small apple or cherry galettes. You can also freeze this for several weeks if needed. I add a little twist by using a little toasted coconut ground in with the almonds. It's super tasty:
36 grams toasted coconut, 60 grams of the almonds, 15 grams all purpose flour, 1/8 Tsp. salt, 50 grams sugar, 83 grams unsalted butter at room temp., 2 small eggs at room temp., 3/4 Tsp vanilla.
In small food processor grind first 5 ingredients, then add butter and eggs and puree until smooth. It will still be a little grainy with the coconut and almonds, but makes a wonderful paste to spread under the fruit.
