Tim: Okay, that sounds weird but I have to watch my glucose levels and this pasta does NOT spike my sugar levels as other pastas do! I love pasta and having to give it up to avoid diabetes was tough. But when I eat this, it does not negatively impact my glucose levels. I suspect the reason is because a real Durham Semolina is mostly a whole grain, just stripped of that awful outer layer. I simply do not like what they call Whole Wheat Pasta. I tried and tried. This pasta has a great mouth feel, cooks up perfectly and tastes great! I can eat this pasta! :D

As with anything else, your mileage may vary, but I test my levels often and when I eat pasta out or other brands, my glucose goes through the roof but it's always held steady with this brand. Hope it works that way for others as well because maybe Sofia Loren knew what she was talking about with saying that Pasta was the secret to her beauty. I was carb-phobic until this experience. :D

lydia mesange: I am very pleased with this pasta. It has good taste and texture, and does particularly well in pasta salads and stir-frys.

One caution: the package says to cook for 8 minutes. I find that these gemelli are perfectly al dente after 5 minutes.
