Suzanne Jacobs: This was a fortuitous find in a discount store. This product is made from Semolina from the Puglia territory of Italy. The wheat is milled correctly and the product is made to retain a bite that is critical in pasta. They estimate the cooking time to assure it is al dente. I check a couple times and rinse in cold water to stop it from cooking. The best pasta on the market.
