Paul R: Dry or syrup malt is an excellent addition to rye bread dough. It supplies a slightly sour taste. I often add a few grams of it to the dry ingredients. And some pickle brine to the wet ingredients.

Mark Sizer: I guess I'm not "foody" enough for this product. There's nothing wrong with it. It does add a fermented flavor to bread. I just don't care enough to use it.
If you enjoy subtle flavors in your bread, I think it would be a fine addition to your pantry. I'm content with just flour, water, salt, and the occasional poolish.
On the other hand, if you add several tablespoons (and slightly over-knead), it makes for a very tasty bread that holds its own with cheese and sausage. That's not a frequent thing for me. I mostly make sandwich bread.
