Amazon Customer: Frankly, I'm not a gluten-free pasta, or as far as that goes, gluten-free anything. However, when I tried this pasta, I was very surprised. After eating our meal, not only did I prefer it over the regular (egg) pasta, but I didn't feel bloated (or overly full), but just felt like I'd eaten the right amount of food. (You'll need to experiment with portion size, as everyone is different) It's now my go-to pasta. Try it!

Jim CarnicelliJim Carnicelli: I miss eating semolina (wheat) based pasta. My system is much happier that I have been on a GF diet for over a decade though. I love eating rice on a regular basic. But most GF pastas are disappointing to me. I've mostly settled for the flat rice noodles used in Asian cuisine. Those are good. But different for sure. These corn-based noodles are very impressive to me. They have the same consistency as rice noodles but a flavor to them that seems more reminiscent to ones made from semolina flour. A certain "warmth" and "brightness" that's hard to describe that is missing from rice noodles. Without the strangely mealy texture of some GF pastas. If you look closely at the photo I took you'll notice some ridges along the pasta ribbon. I think they strengthen the noodles and maybe add a bit more substance to the mouth-feel.
My wife and I generally cook two of these rounds per person. We usually have at least a little left over. So for us one package of 6 serves 3 person-meals. Naturally we eat this with a hearty sauce with protein of some sort. It's not just noodles.
